Kevin Cooks: Kimchi Fried Rice
I had a lot of left over kimchi and I had no idea what to do with it. So of course, I had to make this popular classic dish.
Ingredients
4 slices of pork belly (sub bacon)
1 cup of chopped up kimchi
Kimchi juice (from the bottom of the kimchi jar)
1-2 cups of day old rice
1 onion
1 scallion
1 egg
garlic
Chopped nori for garnish
1 tablespoon of sesame oil
Directions:
Prepare your ingredients by chopping up your bacon/pork belly into bite size pieces. Chop your onion and mince your garlic.
Start by heating a large wok or pan. Start by cooking your pork belly or bacon until the oil starts to render out. Add your garlic and chopped onion and continue cooking until the onion becomes soft and translucent. Next add the kimchi and cook until it begins to caramelize.
I found that saute’d kimchi is pretty dang good.
Add your day old rice and stir fry it. Add your kimchi juice and 1 tablespoon of the sesame oil and mix well.
Serve with a fried egg and nori for garnish
Easy.
